Quesadillas with Salsa and Sour Cream with Chives

Yield: 4-6 people

FOR LACTO-VEGAN QUESADILLAS

Ingredients:

  1. 2 red bell peppers
  2. Cooking oil
  3. 2 large onions, cut into rings
  4. 2 tablespoons sugar
  5. Salt, as needed
  6. Pepper, as needed
  7. Cheese, grated
  8. 4 tortillas (5 inches in diameter)

Steps:

  1. Grill or roast red bell peppers on the stove top until fully charred. Then wrap it with aluminum foil for 10 minutes. Unwrap red bell peppers and peel off charred skin. Slice into strips and put aside until needed.
  2. Preheat non-stick pan on low heat. Throw in onions, season with salt and pepper, and add in sugar. Stir and cover for 10 minutes. Uncover and cook for 30 minutes to 1 hour until dark brown and sticky.
  3. Place one tortilla on a preheated non-stick pan coated with a small amount of cooking oil. Evenly spread cheese on the bottom, followed by the roasted bell peppers and caramelized onions. Spread another layer of cheese and top with tortilla. Flip when the bottom side is nicely browned, about 5 minutes.
  4. Repeat this process on the last pair of tortillas.

FOR CHICKEN QUESADILLAS

Ingredients:

  1. 2 chicken breast halves, sliced into strips
  2. 1 medium red onion, thinly sliced
  3. 2 green onions, thinly sliced
  4. Cooking oil
  5. Salt, as needed
  6. Pepper, as needed
  7. Cheese, grated
  8. 4 tortillas (5 inches in diameter)

Steps:

  1. Season chicken strips with salt and pepper and pan-fry until fully cooked through.
  2. Place one tortilla on a preheated non-stick pan coated with a small amount of cooking oil. Evenly spread cheese on the bottom, followed by the fried chicken strips, red onions, and green onions. Spread another layer of cheese and top with tortilla. Flip when the bottom side is nicely browned, about 5 minutes.
  3. Repeat this process on the last pair of tortillas.

FOR BEEF QUESADILLAS

Ingredients:

  1. 1/4 kilo beef tenderloin, cut into strips
  2. 2 red bell peppers, julienned
  3. 2 green bell peppers, julienned
  4. Cooking oil
  5. Salt, as needed
  6. Pepper, as needed
  7. Cheese, grated
  8. 4 tortillas (5 inches in diameter)

Steps:

  1. Season beef strips with salt and pepper and pan-fry until fully cooked through.
  2. Place one tortilla on a preheated non-stick pan coated with a small amount of cooking oil. Evenly spread cheese on the bottom, followed by the fried beef strips, red peppers, and green bell peppers. Spread another layer of cheese and top with tortilla. Flip when the bottom side is nicely browned, about 5 minutes.
  3. Repeat this process on the last pair of tortillas.

FOR SALSA

Ingredients:

  1. 4 medium tomatoes, diced
  2. Juice of half a lemon
  3. 3 green onions, thinly sliced
  4. 1 jalapeno, deseeded and thinly sliced
  5. Salt, as needed
  6. Pepper, as needed

Steps:

  1. Combine all ingredients.
  2. Refrigerate for 4 hours before serving.

FOR SOUR CREAM WITH CHIVES (NOT PICTURED)

Ingredients:

  1. 2 dollops sour cream
  2. 1 tablespoon chives, roughly sliced
  3. Juice of half a lemon

Steps:

  1. Combine all ingredients.
  2. Refrigerate for 4 hours before serving.
