Beef Burgers with Roasted Garlic Mayo and Caramelized Mushrooms and Onions

Yield: 8 burgers

Ingredients:

  1. Burger buns
  2. Cheese
  3. Lettuce
  4. Pineapple slices

FOR THE BURGER PATTIES

Ingredients:

  1. 1 kilo ground beef tenderloin
  2. Kosher salt, as needed
  3. Pepper, as needed
  4. Cooking oil, as needed

Steps:

  1. Divide the meat into 8 equal portions.
  2. Form each portion into a 1/2-inch-thick patty and make a depression in the center with your thumb.
  3. Refrigerate for an hour.
  4. Take patties out of the fridge five minutes before pan-frying. Prior to frying, season both sides with salt and pepper.
  5. Heat the oil in pan or griddle over high heat until the oil begins to shimmer. Cook the patties until slightly charred on the first side, about 3 minutes. Flip over patties and top with cheese. Cook for 4 minutes, covered, or until desired doneness is achieved.

FOR THE ROASTED GARLIC MAYONNAISE

Ingredients:

  1. 1 bulb of garlic, cut in half transversely
  2. Salt, as needed
  3. Pepper, as needed
  4. 1 tablespoon cooking oil
  5. 4 tablespoons mayo
  6. Juice of 1/2 lemon

Steps:

  1. Preheat oven to 400 degrees Fahrenheit
  2. Brush both garlic halves with oil and season with salt and pepper. Wrap with aluminum foil and roast in preheated oven for 40 minutes or until garlic becomes soft.
  3. When cool enough to handle, squeeze the soft pulp into a bowl. Incorporate mayo and lemon, season with salt and pepper and stir until thoroughly combined. Refrigerate for at least 4 hours before using.

FOR THE CARAMELIZED MUSHROOMS AND ONIONS

Ingredients:

  1. 8 slices of thick-cut bacon
  2. 1 small can mushrooms, drained
  3. 4 medium onions, sliced into rings
  4. 3 tablespoons white sugar
  5. Salt, as needed
  6. Pepper, as needed

Steps:

  1. Fry bacon until crisp over medium-high heat. Set aside until needed.
  2. Using the same pan and using the bacon fat, add in onions. Season with salt and pepper, and add in sugar. Stir and cover for 10 minutes. After 10 minutes, uncover and cook for 30 minutes to 1 hour until onions are dark brown and sticky.
  3. Stir in mushrooms. Season with salt and pepper and cook for an additional 10 minutes.
  4. Turn off heat and stir in bacon.

TO ASSEMBLE

  1. Toast burger buns until nicely browned and crispy.
  2. Spread a good amount of mayonnaise on bottom halves of buns.
  3. Top with lettuce and pineapples, then patties, and garnish with caramelized mushrooms and onions.
  4. Cover with top buns and enjoy!
