Chicken and Avocado Sandwich

Ingredients:

  1. 2 slices of whole wheat bread
  2. 1 tbsp mayonnaise
  3. Lettuce
  4. 2 tomato slices
  5. A couple rings of red onion
  6. Half of avocado, thinly sliced

FOR THE CHICKEN

Ingredients:

  1. 1 boneless and skinless chicken breast half
  2. Juice of 1/2 lime
  3. 3 garlic cloves, roughly chopped
  4. Salt, to taste
  5. Ground black pepper, to taste
  6. 2 tbsps butter, for pan-frying

Steps:

  1. Combine first 3 ingredients in a container and marinate for 30 minutes.
  2. Preheat non-stick pan over medium-low heat. Once hot, add 2 tbsps butter.
  3. Season chicken breast with salt and pepper and pan-fry until fully cooked through, about 10 minutes.
  4. Set aside until needed.

TO ASSEMBLE:

  1. Spread mayonnaise on one side of one of the whole wheat bread slices.
  2. Assemble according to your preference.
